Green Tea Brewing Methods and Recipes

One of the main characteristics of green tea is its versatility. Green tea can be used to create everything from simple cakes, to ice cream, cookies and more. It is undoubtedly one of the best additions to many recipes and provides a flavour kick as well as increasing nutritional value. Below are a variety of recipes we here at Yamaguchien regularly supplement with green tea, plus some directions on how to properly brew your own. We hope you enjoy! 

Brewing For Sencha, Gyokuro, Bancha, Genmaicha & Hojicha

  • Insert tea leaves in the teapot 
  • Pour hot water into pot and let it infuse for the specified time
  • Pour all tea equally into cups
  • Complete and ready to be served
For consecutive infusions, only half the infusion time is required.

Brewing Steps For Matcha

  • Warm up tea whisk and cup with hot water and then dry cup
  • Sift required Matcha into cup (see table below)
  • Add required hot water into cup and whisk well until small bubbles are formed
  • Complete and ready to be served
*Use Matcha cup and tea whisk.

Green Tea (Matcha powder) Ice Cream

  • 2 Litres of vanilla icecream
  • 3 Tbsp. or 24g of Matcha
  • Take ice cream out of freezer for about 1 hour to thaw
  • Sift Matcha into ice cream and mix well
  • Put back into freezer for about 4 hours

Green Tea Cookies

Ingredients for 60 small cookies:
  • 8g Matcha 8g
  • 140g Unsalted butter 140g
  • 250g Plain flour 
  • 100g Sugar 
  • 8g Baking powder 
  • 8 drops Vanilla essence 
  • 1 Egg
  • Place butter in microwave for 20 seconds
  • Mix butter in a large bowl until creamy
  • Add sugar into butter and mix well
  • Add beaten egg and vanilla essence into mixture and mix well
  • Pour Matcha, flour and baking powder into mixture and mix gently
  • Put mixture in fridge for 1 hour
  • Roll out mixture and cut into shapes
  • Put in preheated oven at 180c for 10 mins

Green Tea Pound Cake

Ingredients for 4 servings:
  • 1/2 Cup butter
  • 1 Tbsp. Matcha
  • 1/2 Tsp. baking powder
  • 2 Large eggs
  • 1 Cup flour
  • 2/3 Cup sugar
Cream butter in a bowl then add sugar to the butter and mix well. Gradually add beaten egg and stir well. Sift flour, baking powder, and green tea powder together and add the flour to the egg mixture. Pour the batter into a buttered loaf pan. Bake in preheated 180c oven for about 30-40 minutes.

Green Tea Roll Cake

Ingredients for 4 servings:
  • 4 Eggs
  • 30g Plain flour
  • 10g Corn flour 
  • 60g Sugar 
  • 1 Tsp. Matcha powder 
  • 100ml Thick cream
  • 10g Sugar    
Separate egg whites and yolks then put 30g sugar in with yolks and mix well. Sift plain flour and corn flour into mixture. In a different bowl gradually add 30g sugar into egg whites and mix well. Put all mixtures together and mix well. Place into a rectangular tray and put in the preheated oven at 180c for 10 minutes. Spread the Matcha whipped cream onto the rectangular sponge and roll. Cut the cake and ready to serve.

Matcha Latte

  • 1 Tsp. Matcha 
  • 1 Tsp. Sugar 
  • 100ml Hot water
  • 100ml Milk

Dissolve sifted Matcha and sugar with hot water. Add hot milk and mix well with tea whisk until bubbles are formed. Drink once cooler.

  • Place 1 teaspoon Matcha in a small bowl
  • Add 2 teaspoons milk
  • Mix into green paste
  • Use 2 cotton buds to apply paste on face avoiding the eye area
  • Wait 10 minutes 
  • Wash off with warm water
